Mexican Chorizo Skillet

we love this Mexican chorizo breakfast skillet that is each low carb and keto friendly. Ingredients

  • 1 tbsp butter
  • 1/2 cup yellow onion finely diced
  • 1 cup green pepper diced
  • 1 cup sliced mushrooms
  • 2 cups cauliflower cubed
  • 8 oz chorizo
  • 6 large eggs
  • salt and pepper to taste
  • 1 tbsp heavy cream
  • 1 cup spinach
  • 1 cup shredded cheddar divided
  • 4 slices cooked bacon optional
  • 1/2 cup green onion sliced optional

commands

  1.  start cooking first. i like to cook mine within the oven so the timing is best with this dish
  2. In a big oven safe skillet, soften butter. add in onion, green pepper, mushrooms and cauliflower. Saute until vegetables begin to melt about 5 mins.
  3. add in chorizo and prepare dinner for approximately 7 mins. Chorizo will rather liquify but that is everyday!
  4. In a small bowl, whisk collectively eggs, salt and pepper, and cream. Pour into skillet and prepare dinner till eggs firm up, about 5 mins
  5. Stir in spinach and half of cup shredded cheese and blend till spinach starts offevolved to wilt.
  6. pinnacle with the final cheese and stick pan in the oven. Broil on high for about three mins until the cheese is bubbly and golden.
