Salted Caramel Pumpkin Spice Balls

Comin’ atcha with some other ball recipe 😉 You all regarded to revel in the Salted Caramel Pumpkin Spice Balls I posted this autumn, so I notion it'd be fun to share every other. I simply started to increase this chocolate version first, but then were given a little swept up within the pumpkin craze! Now that I’ve had time to tweak it until just proper, I’m geared up to proportion. 


While i was developing the recipe,  my daughter was my taste tester and she stored going back for extra,  saying she cherished those “fancy treats”. these experience like such an indulgence yet behind the scenes they're presenting wholesome advantages. an ideal recovery addition to a vacation cookie platter!

Ingredients

  • 6 medjool dates, pits removed (small to medium size)
  • 1/3 cup tigernut flour
  • 2 tbsp carob powder
  • 1/2 cup collagen
  • 1/4 cup coconut oil
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract (*for strict AIP use 1/4 tsp vanilla bean powder)
  • 1 tbsp water
  • tigernut flakes , optional

instructions

  1. location all ingredients in blender or food processor. i take advantage of a vitamix.
  2. manner till mixture starts offevolved to stick together and clump.
  3. Scoop by the tablespoon and shape into balls. If its too sticky or oily to deal with, location in fridge for 20-half-hour.
  4. location balls on a parchment coated dish.
  5. area a pinch of tigernut flakes on pinnacle of each ball.
  6. Refrigerate until firm. Approx 45-60 mins.
  7. enjoy!
  8. store in fridge in glass box.
