Healthy Quinoa Vegetable Salad

Wholesome Quinoa Vegetable Salad with a sparkling lemon-basil dressing! filled with a double protein punch and fantastic for take-alongside lunches. (Vegan, gluten-unfastened, oil-loose). We’re in love with this quinoa salad! It’s any other clean cold lunch for my husband to carry to paintings. The quinoa and garbanzo beans offer a double protein punch, and the lemon-basil dressing is easy, mild, and clean.


As usually, i love admiring the stunning splash of colour from the veggies. It’s vegan, gluten-loose, and a great exchange of pace from our Mexican Quinoa Salad with cumin-lime dressing. wish you experience too!

Ingredients

  • 1 cup dry quinoa
  • 15 oz. can garbanzo beans, rinsed and drained
  • 3 roma tomatoes
  • 1 orange bell pepper
  • 1 1/2 cups corn (I used frozen, thawed)
  • 4 green onions

{For the dressing}

  • 1 Tbsp. olive oil (optional)
  • 2 Tbsp. fresh lemon juice, more to taste
  • 1 1/2 tsp. basil (or fresh if you have it)

instructions

  1. Rinse quinoa, and cook dinner consistent with package directions.
  2. meanwhile, in a small bowl whisk together olive oil, lemon juice, and basil. Set aside.
  3. Slice inexperienced onions, cube roma tomatoes and bell pepper.
  4. when quinoa is completed cooking, let cool. Then area all salad ingredients in a huge bowl.
  5. Pour dressing over top and mix well to combine.
  6. Can devour right now or relax earlier than serving.
