Wholesome Quinoa Vegetable Salad with a sparkling lemon-basil dressing! filled with a double protein punch and fantastic for take-alongside lunches. (Vegan, gluten-unfastened, oil-loose). We’re in love with this quinoa salad! It’s any other clean cold lunch for my husband to carry to paintings. The quinoa and garbanzo beans offer a double protein punch, and the lemon-basil dressing is easy, mild, and clean.

As usually, i love admiring the stunning splash of colour from the veggies. It’s vegan, gluten-loose, and a great exchange of pace from our Mexican Quinoa Salad with cumin-lime dressing. wish you experience too!
Ingredients
- 1 cup dry quinoa
- 15 oz. can garbanzo beans, rinsed and drained
- 3 roma tomatoes
- 1 orange bell pepper
- 1 1/2 cups corn (I used frozen, thawed)
- 4 green onions
{For the dressing}
- 1 Tbsp. olive oil (optional)
- 2 Tbsp. fresh lemon juice, more to taste
- 1 1/2 tsp. basil (or fresh if you have it)
instructions
- Rinse quinoa, and cook dinner consistent with package directions.
- meanwhile, in a small bowl whisk together olive oil, lemon juice, and basil. Set aside.
- Slice inexperienced onions, cube roma tomatoes and bell pepper.
- when quinoa is completed cooking, let cool. Then area all salad ingredients in a huge bowl.
- Pour dressing over top and mix well to combine.
- Can devour right now or relax earlier than serving.
