Carrot Cake Whoopie Pies

  • 1 (8 oz) tub pineapple cream cheese (I used Philadelphia)
  • 1/2 cup (1 stick) butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
