Soba Noodle Salad with Peanut Dressing

Maintain dinner mild and healthy with this Soba Noodle Salad  with Peanut Dressing. geared up in much less than 30 minutes and packed full of delicious vegetables. this is considered one of my all time favorite summer time food! plenty of clean veggies are blended together with hearty soba noodles (you could discover the only’s I used here) before being crowned off with a healthy part of peanut dressing.


This requires approximately 20 mins of time and very little stove time – best for those warm summer time nights while just the thought of cooking over the range makes you immediately start sweating.

Ingredients
FOR THE PEANUT DRESSING

  • 1/2 cup peanut butter
  • 1/4 cup olive oil
  • 1/4 cup light soy sauce or tamari
  • 1 tbsp. sriracha
  • 1/2 inch fresh ginger
  • 2 cloves garlic
  • 1 jalapeño optional if you prefer less spice
  • 1/4 cup water or more as needed

FOR THE SALAD

  • 6 oz. dry soba noodles
  • 1/2 purple cabbage diced in small pieces
  • 1 large carrot julienned
  • 6 small sweet peppers julienned
  • 1 green onion diced
  • 1/4 - 1/2 cup cilantro diced
  • 1/4 cup chopped unsalted peanuts

instructions

  1. FOR THE DRESSING: upload all the components to a blender or food processor. upload water as wanted until desired consistency is reached. flavor and regulate seasoning as wanted. cowl, and area inside the refrigerator until geared up to use.
  2. FOR THE SALAD: cook soba noodles in step with bundle instructions. After draining, run noodles below cold water. Dry off with paper towels and vicinity in a large bowl. add ultimate salad elements and toss to mix. add dressing to taste and enjoy!
