Creamy Mushroom Stuffed Meatloaf

Ingredients
For the creamy mushroom stuffing

  • 1 tbsp butter
  • 1 chopped onion divided
  • 200g/4cups mushrooms finely chopped
  • 1 tbsp fresh or dried thyme leaves only
  • salt to taste
  • 1/4 tsp pepper
  • 2-3 cloves garlic minced
  • 125g/4oz plain cream cheese
  • 35g/1cup fresh arugula/rocket

For the meatloaf mixture

  • 2 lbs ground beef I used 5% fat
  • 1 tbsp Worcestershire sauce
  • 1 egg
  • 60g/2/3cup oats
  • 1 tbsp fresh or dried thyme
  • 1 tsp paprika
  • 1 tbsp salt
  • 1/2 tsp pepper
  • 60ml/1/4cup water

For the creamy mushroom stuffing

  1. Preheat the oven to 180C/350F. prepare the greens by means of peeling and cutting onions, mincing garlic and cutting mushrooms. 
  2. melt the butter in a frying pan and saute chopped onions over low heat for five mins. get rid of half of the onions and set aside. To the equal pan upload chopped mushrooms and saute over medium warmth with a pinch of salt, pepper, garlic and fresh thyme till maximum liquid from mushrooms is evaporated. upload flour and stir to coat the mushrooms, then upload the cream cheese and permit it soften over very low warmness, then upload the arugula and take off the warmth to chill for 10 minutes. 

For the meatloaf

  2. Oil a loaf pan and line the lowest and the edges of it with 2/3 of the meatloaf mixture to create a tunnel inside the middle as shown in snap shots. Fill the tunnel with the creamy mushroom mixture and cover the pinnacle with the closing meat. ensure to seal the seams. Bake at 180C/350F for 50 minutes to one hour until the internal temperature reaches 70C/160F. Take out of the oven and funky for 10 minutes then slice and serve.
