- 2 tsp Stevia Powder

- 4 oz Melted Unsalted Butter (112 g)
- 1 tsp Vanilla Extract
Fillilng
- 1 cup Heavy Cream (240 cc)
- 2 tbsp Stevia Powder
- 8 oz Cream Cheese (Room Temp)
- 10 oz Mascarpone Cheese (Room Temp)
- 2 tsp Vanilla Extract
Coffee Syrup
- 1/2 cup Strong Coffee (Room Temp) (120 cc)
- 2 tbsp Rum (Omit if you want to go completely sugar free)
- 1 tsp Liquid Stevia
Topping
- 1 - 2 tbsp Unsweetened Cocoa Powder
instructions
Cookies
- reduce parchment paper into a rectangle a bit larger than sixteen x 8 inch (40 x 20 cm). Fold it to make 8 inch (20 cm) squares. (this is because I built up tiramisu in an eight inch square baking dish. exchange the scale consistent with your dish.)
- Preheat the oven to 180 C / 350 F.
- combine all the ingredients in a bowl. blend nicely till a gentle dough bureaucracy. (I used this Stevia Powder.)
- vicinity the dough onto the parchment paper. evenly press in the rectangle (the 2 8 inch squares).
- cut the dough into half of along the folding line of parchment paper. Then reduce every square into 12 pieces.
- Bake for 15 - 20 mins.
- permit cool completely. (they are a bit brittle and tough to handle whilst heat.)
Filling
- In a large bowl, beat the heavy cream and stevia until stiff peaks form. switch to the fridge.
- In a separate bowl, cream the cream cheese. upload the mascarpone and stir nicely to combine. upload the vanilla and stir properly.
- Fold inside the whipped heavy cream into the cream cheese mixture in 2 - 3 parts.
coffee Syrup
- In a small bowl, mix well the espresso, rum and liquid stevia.
assembly
- set up 1/2 (12 portions) of the cookies into the bottom of an 8 inch (20 cm) square dish. Spoon half of the coffee syrup throughout them. Then, spread 1/2 of the filling over the cookies into a good layer. (* optionally available: if you want to beautify the pinnacle later, reserve some of the filling mixture earlier than spreading it.)
- arrange the ultimate cookies over the filling and spoon the final coffee syrup over them. unfold the final filling over the cookies into a good layer.
