Mint Chocolate Mousse Cookies & Cream Parfaits

  • 4 oz Bittersweet chocolate chips
  • 3 T. Sugar
  • 3-4 drops doTERRA Peppermint Essential Oil
  • 10 Mint chocolate cookies
  • Mint Leaves, for garnish

INSTRUCTIONS

  1. heat ⅓ cup + 1 T. cream in a saucepan till hot.
  2. Whisk together yolks, sugar, and a pinch of salt in a bowl till combined nicely, then add hot cream in a slow flow, whisking till combined.
  3. switch aggregate to saucepan and cook over moderately low warmth, whisking constantly, simply till it thickens. add in the vanilla and chocolate chips and whisk till the chocolate is melted and fully included. Set aside to chill.
